HAZELNUT SANDWICH COOKIES
(makes 29 small heart shaped cookies or 14 sandwich cookies )
50g coconut sugar
50g Hazelnut & Lions Mane praline paste
Pinch of salt
In a mixing bowl, cream together the butter and coconut sugar until light and fluffy.
Add the hazelnut praline paste to the butter mixture and continue to mix until well combined and add the dry ingredients to the butter mixture, mix well until a dough forms.
Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for 15 minutes to firm up.
Once the dough has chilled, roll it out on a lightly floured surface to a thickness of about 6mm.
Use heart-shaped cookie cutters to cut out cookies from the rolled dough. Place the cut-out cookies onto the prepared baking sheet, leaving some space between each cookie, then place it back in a fridge to cool.
In the meantime preheat the oven to 175 degrees Celsius. Line a baking sheet with parchment paper / micro-perforated silicone mat* and set it aside.
Bake in the preheated oven for 15-17 minutes, or until the edges of the cookies are golden brown.
Remove the cookies from the oven and allow them to cool completely on a wire rack.
* If you are using a micro-perforated silicone mat for better results, place another mat on the top of your cookies and then bake so you have an even cookie on both sides.
HAZELNUT CHOCOLATE CREAM
100g Hazelnut & 7 Mushroom Blend Praline
30g melted ceremonial cacao melted
In a heatproof bowl, combine the Hazelnut & 7 Mushroom Blend Praline and melted ceremonial cacao.
Stir the mixture until smooth and well incorporated. Place it in a fridge to cool and harden. You are looking for a spreadable texture.
ASSEMBLING THE COOKIES:
Once the cookies have cooled, spread a dollop of the hazelnut chocolate cream onto the bottom of one cookie.
Take another cookie and sandwich it with the cream, placing the bottom side down.
Repeat this process with the remaining cookies and hazelnut chocolate cream.
Serve the Hazelnut Heart-Shaped Cookies with Hazelnut Chocolate Cream as a delightful treat or store them in an airtight container for later enjoyment.
